Andras Bacsai e09876adcd fix(config): use docker.io as the default registry ...

A merge brought back ghcr.io as the default registry and helper image
registry. The install and upgrade scripts and the compose files use
docker.io.

- Default REGISTRY_URL and the helper image registry to docker.io
