docs: fix MongoDB pool default values to match code

Actual defaults in lib/storage/mongo-storage.js:
- MONGO_POOL_SIZE: 5 (not 10)
- MONGO_MIN_POOL_SIZE: 0 (not 1)
- MONGO_MAX_IDLE_TIME_MS: 30000 (not 10000)
